Part of everyday life that is taken for granted is eating.  Until you can't.  This might happen because of temporary dental work, advancing years, or illness.  Head and neck cancer patients might find themselves in the situation where even the smallest meals can be difficult (or even painful) to eat, and leave them feeling exhausted.

It does not change the fact that you want to enjoy your food.  Difficulties eating and swallowing does not mean you have to live on the same food day in and day out.  Many recipes deemed 'easy to swallow' are actually targetted at young children, which can be frustrating for the adult with more mature tastes.
