Part of everyday life that is taken for granted is eating.  Until you can't.  This might happen because of temporary dental work, advancing years, or illness.  Head and neck cancer patients might find themselves in the situation where even the smallest meals can be difficult (or even painful) to eat, and leave them feeling exhausted.

Goats Cheese and Avocado Soup

Antony Worrall Thompson's Goats Cheese and Avocado Soup

Ingredients

· 2 handfuls parsley leaves
· 2 handfuls baby spinach, washed
· 4 tablespoons extra virgin olive oil
· 225g very soft young goat’s cheese
· 300ml double cream
· 2 ripe haas avocados, stoned, peeled and diced
· 600ml vegetable stock
· 1 teaspoon lemon juice

The following seasoning is suggested in the recipe but obviously you can adapt these as you require depending on your tolerance.
